Sweet Potato Curry with Jasmine Rice

A delicious vegetable curry filled with immune boosting nutrients. Made into a complete meal with the addition of Grain Trust's Steamed Jasmine Rice.

Ingredients

  • 1 tablespoon coconut oil
  • 4 gloves of minced garlic
  • 1 tablespoon curry powder
  • 1 ½ teaspoon ground ginger
  • 1 teaspoon turmeric powder
  • 1 medium sweet potato- peeled and diced into small cubes
  • 1 medium zucchini-diced
  • 1 medium carrot-chopped
  • ½ cup frozen peas
  • ½ cup red lentils
  • 1 can coconut milk
  • 1 cup vegetable broth
  • Juice of 1 lime
  • Salt and pepper to taste
  • Grain Trust Jasmine rice

For Serving (optional)

  • Fresh Cilantro
  • Cashews
  • Fresh lime juice

Instructions

  1. heat a large pot to medium heat and add 1 tablespoon coconut oil. Add the garlic, ginger, turmeric powder and curry powder. Cook, stirring frequently for about 1 minute.
  2. Add veggie stock, coconut milk, lime juice, sweet potatoes, carrots, red lentils, and a pinch of salt and pepper. Stir and bring to a boil then reduce heat to a simmer. Cook for 20 minutes.
  3. Add zucchini and peas and cook for another 8-10 minutes.
  4. Meanwhile, steam Grain Trust Jasmine Rice in the microwave for 3 minutes.
  5. Serve the curry with the jasmine rice, cilantro, cashews, and fresh lime juice.
