Sweet Potato Curry with Jasmine Rice (Vegan + GF)

Warm bowls filled to the brim with nourishing ingredients have been my best companion recently. Vegetable stews and curries, cozy bowls of oats in the morning, and salads made with warm roasted vegetables have been on serious repeat. In the winter, I intuitively lean towards foods that are warm and filled with spices like cinnamon, turmeric, and ginger. These foods support our body’s immune system so that we can stay healthy during the winter months.

I am also very much about convenience and often find myself throwing together a meal in 30 minutes or less. I am ALL about anything that assists in making meal time easier! Grain Trust‘s steamed rice is made perfectly in the microwave in just 3 minutes which has made my meal times even better.

This vegan vegetable curry is packed with vegetables, immune boosting spices, and protein packed lentils. Paired with Grain Trust rice and it makes a quick, balanced, and wonderful winter meal!

Sweet Potato Curry with Jasmine Rice

A delicious vegetable curry filled with immune boosting nutrients. Made into a complete meal with the addition of Grain Trust's Steamed Jasmine Rice.

Ingredients

  • 1 tablespoon coconut oil
  • 4 gloves of minced garlic
  • 1 tablespoon curry powder
  • 1 ½ teaspoon ground ginger
  • 1 teaspoon turmeric powder
  • 1 medium sweet potato- peeled and diced into small cubes
  • 1 medium zucchini-diced
  • 1 medium carrot-chopped
  • ½ cup frozen peas
  • ½ cup red lentils
  • 1 can coconut milk
  • 1 cup vegetable broth
  • Juice of 1 lime
  • Salt and pepper to taste
  • Grain Trust Jasmine rice

For Serving (optional)

  • Fresh Cilantro
  • Cashews
  • Fresh lime juice

Instructions

  1. heat a large pot to medium heat and add 1 tablespoon coconut oil. Add the garlic, ginger, turmeric powder and curry powder. Cook, stirring frequently for about 1 minute.
  2. Add veggie stock, coconut milk, lime juice, sweet potatoes, carrots, red lentils, and a pinch of salt and pepper. Stir and bring to a boil then reduce heat to a simmer. Cook for 20 minutes.
  3. Add zucchini and peas and cook for another 8-10 minutes.
  4. Meanwhile, steam Grain Trust Jasmine Rice in the microwave for 3 minutes.
  5. Serve the curry with the jasmine rice, cilantro, cashews, and fresh lime juice.
