Avocado Salsa with Salmon and Garlicky Broccolini
One of my favorite weeknight dinners is pan seared salmon. It is simple to make and always feels so nourishing to eat! Recently I have been loving adding avocado salsa to our salmon nights at home. Creamy California Avocados mixed with fresh ingredients make a delicious fresh and flavorful side kick to salmon. Bonus: it also is amazing with tortilla chips!
For the salsa, I like to use avocados that are in that sweet spot at being ripe but not too ripe. You can tell when an avocado is in this sweet spot when it gives in just a bit when you gently press the skin with your fingers. One of my tips to keeping avocados good and ripe for a longer period of time is to refrigerate them!

Avocado Salsa over simple pan seared salmon and garlicky broccolini
Ingredients
Avocado Salsa
- 2 ripe avocados cubed
- 1 lime juiced
- 1/2 cup chopped red onion
- 1 cup chopped grape tomatoes
- 1 tsp garlic powder
- salt to taste
Pan Seared Salmon
- 2 salmon filets
- salt to taste
- 1/2 lemon squeezed
- 1 tbsp olive oil
Garlicky Broccolini
- 1 bundle broccolini
- 2 garlic cloves minced
- salt to taste
- 1 tbsp olive oil
- 2 tbsp water
Instructions
For the Salsa

Simply add the chopped avocado, red onion, and tomatoes in a bowl. Add the juice of one lime as well as salt and garlic powder. Mix with a spoon and enjoy with chips or on top of salmon.
For the Salmon

In a medium hot skillet, place the salmon filets skin side down. Season the flesh side with salt, a drizzle of olive oil, and a squeeze from half a lemon. Cook for about 5 minutes or until you can see from the sides of the salmon that it has been cooked halfway. Flip and cook for another 5 minutes or until it looks totally cooked on the sides. You will know it is when the bright color changes to an opaque lighter color and the flesh flakes easily with a fork.
For the Broccolini

In a medium hot skillet, add a drizzle of olive oil and the broccolini. Season with salt and the add the minced garlic. Cook until it has been slightly charred on both sides then add the water, cover with a lid, reduce heat, and cook for another 5 minutes.
For the meal

Plate the salmon and broccolini. Top with the avocado salsa and enjoy.
