3 Ingredient Peanut Butter Cookies
This is a recipe that I have been making for years and years…like since 2007. Around the same time when I spent hours searching for the prettiest AIM icon and knew all the words to Fergalicious. This recipe was the first recipe that showed me how much I love baking.
Because this is such a fool-proof recipe that turns perfect every time, I gained a lot of confidence in the kitchen. Back then, I used white cane sugar and Jiff peanut butter. These cookies got a sweet upgrade with organic coconut sugar (lower glycemic index and contains more nutrients that white sugar) and organic peanut butter. It may seem crazy that there are only 3 ingredients but trust me they are amazing!
Ingredients
- 1 cup Organic Peanut Butter
- 1 cup Coconut Sugar
- 1 egg organic and pasture raised if possible
Instructions

Preheat oven to 350 degrees farenheit. Line a baking tray with parchment paper.

Mix all of the ingredients together until well combined.

Roll a tablespoon size dough ball of dough between your palms and place on the lined baking sheet. Repeat until all the dough is used, keeping them one inch apart. (I was able to make 20)

Using fork prongs, make the traditional peanut butter cookie criss-cross design by gently pressing the prongs on the dough balls.

Bake for 8-10 minutes or until the bottoms of the cookies are browned. Remove from the oven and let cool.
Recipe Notes
- This recipe can easily be made vegan by using a "flax egg" in place of a regular egg.
