Creamy Avocado Basil Pasta Sauce
Some sort of pasta dish is always on the dinner rotation in our home! It’s simple to make, satisfying, and ingredients can easily can be swapped out for dietary needs. Since I eat gluten free and (mostly) dairy free, I often cook up my favorite gluten free pasta made from chickpeas and find substitutions for any dairy ingredients.
This creamy avocado basil pasta is full of flavor and incredibly creamy from the California Avocados which are hitting their peak season next month! It’s decadent, yet doesn’t feel as heavy as a dairy based cream sauce would. Did I mention that it only takes 15 minutes to make AND you just need to add all the ingredients to a food processor (or blender!)? YEP!
You need these simple ingredients:
Ripe, Fresh California Avocados
Fresh basil
Lemon juice
Plain yogurt (dairy free if needed)
garlic powder
olive oil
salt & pepper
pasta
Simply blend/pulse all the pasta sauce ingredients together and pour into cooked pasta! If you’re looking to add in more vegetables to this dish, you could add frozen peas to the cooking pasta during the last two minutes before draining. Sautéed mushrooms or spinach would also be great additions! Of course, you are getting in amazing nutrients just from the sauce and it is fabulous as is!
