Almond Butter Chocolate Popcorn Bites

I cannot have popcorn without having something sweet and preferably chocolate-y with it. When I was a little girl and my parents would take me to the movies, I HAD to have Raisinets along with my popcorn. While I may not opt for movie theater popcorn or Raisinets anymore, I still love this salty sweet combo. This dessert is quick and wholesome which seems to be a recurring theme here on Wildly Wholesome.  It is also delicious and seriously addictive! Say hello to your new movie night companion. 

 

Almond Butter Chocolate Popcorn Bites

A vegan, gluten free, dairy free, and paleo friendly salty-sweet dessert

Ingredients

For Base

  • 1 cup almond butter
  • 1/4 cup maple syrup
  • 1/2 cup coconut flour
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt

For Chocolate Layer

  • 1/2 cup Cacao powder
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/2 cup Pipcorn Sea Salt Mini Popcorn

Instructions

  1. Line a square shaped Tupperware or brownie pan with parchment paper. set aside.

  2. Mix all base ingredients together in a bowl until well combined. This mixture should be stiff and difficult to stir once all ingredients are incorporated.

  3. Add the almond butter base mixture to the parchment lined dish using the back of a spoon or spatula to flatten. Set in the refrigerator.

  4. Mix the melted coconut oil, maple syrup, and cacao powder together in a bowl.

  5. Take the dish with the base out of the refrigerator and pour the cacao mixture evenly on top. Add pieces of popcorn then place back in the refrigerator for 30 minutes.

  6. After the bars have set in the fridge and are firm, cut even squares using a knife. Enjoy! Best if kept in the refrigerator until eating.

Recipe Notes

  • To make paleo, simply omit the popcorn
