Flaxseed Cookie Dough Bites

Okay, I know what you are thinking…”Another energy bite?! Does the world reallyyy need another one of these recipes?” While I have to agree that energy bites have taken over the Instagram feeds and Pinterest boards over the past 5 years, this recipe is 100% reallyyy needed. 

This recipe is simple. It is wholesome. It is energizing. And most importantly, it is delicious. If you don’t believe me, you should just try it for yourself! After you bite into one of these delish bites and scrape the bowl completely clean, I will be all ears for how much the world reallyyy did need this recipe after all.

Flaxseed Cookie Dough Bites

Ingredients

  • 1/2 cup almond butter
  • 2 Tbs. honey or maple syrup
  • 1 tsp. vanilla extract
  • 1/2 cup oat flour
  • 1/4 cup flaxseed meal
  • 1 scoop (or heaping Tbs.) vanilla protein powder
  • 1 Tbs. chia seeds
  • 1/4 cup cacao nibs or mini chocolate chips
  • 1 tsp. sea salt for sprinkling

Instructions

  1. Mix almond butter, honey, and vanilla together in a bowl.

  2. Add in the rest of the ingredients one at a time into the almond butter mixture. Mixing well after each is added.

  3. The dough may seem to be too dry but keep on mixing! The consistency should be similar to good ole fashioned cookie dough. 

  4. Once it reaches the desired consistency, roll into tablespoon sized balls. Sprinkle sea salt on the bites. Keep in the refrigerator or eat immediately!

*I used this vanilla protein powder in this recipe. It is my favorite!
