Peanut Butter Cacao Bites

Delicious + simple peanut butter cacao energy bites that make a great healthy snack any time of day!

Ingredients

  • 1 cup shelled peanut pieces
  • 10 pitted medjool dates
  • 1 tbsp natural peanut butter
  • 1 tbs cacao powder
  • 1 tbs coconut oil
  • 1/4 tsp cinnamon
  • 1/4 tsp salt only if peanuts/peanut butter are unsalted

Instructions

  1. In a high speed blender or food processor, add in the peanuts and pulse until they resemble a medium sized crumb.

  2. Add in the rest of the ingredients to the peanuts in the high speed blender or food processor and pulse until well incorporated. They will be done once they can be easily rolled into balls between your palms.You may need to pause between pulses to scrap down the sides.

  3. roll into tablespoon sized balls between your palms until all the "dough" has been used. Place in the refrigerator to set. 

  4. Optional- drizzle on melted chocolate and top with crushed peanuts. Enjoy!
