Can we all agree that pesto is one of the greatest things ever? I will pretty much always say YES to a meal if pesto is involved. I typically take the lazy route and buy a store bought pesto but truthfully, the homemade kind is way better! It is also so quick to make and is amazing to make in batches to add to meals throughout the week or to freeze for the future. This Vegan Cashew Kale Pesto is my favorite tossed with pasta or as a base on pizza!
This pesto recipe is not your typical pesto! It is boosted in nutrition with the addition of Nature’s Greens Organic Kale. I love that this kale is prechopped, it makes the process so much simpler!

Vegan Cashew Kale Pesto
a simple dairy free pesto that is perfect for adding flavor to pasta or pizza!
- 3 cups Nature’s Greens Organic Kale chopped
- 1 cup fresh basil
- 2 cloves garlic
- 1/2 cup raw cashews
- 2 tbs nutritional yeast
- juice of 1 lemon
- 1 cup extra virgin olive oil
- sea salt to taste
In a blender or food processor, add in the kale, cashews, basil, and garlic. Pulse a couple times until finely chopped.
Add the nutritional yeast, lemon juice, olive oil, and sea salt. Pulse again until incorporated. Taste test and add more salt or lemon juice if needed.
Serve immediately and store in an air tight container. Enjoy within a week.
