No-bake vegan brownies
- 2 cups medjool dates
- 1 cup raw walnut butter
- 2 tbsp cacao powder
- 1 tbsp maple syrup
- 1 pinch salt
Add all ingredients into a food processor or high speed blender. Pulse until well combined. You will have to scrape down the sides in between pulsing to make sure that it is all getting broken down.
Once it is well mixed, add the brownie “dough” to a parchment lined small baking dish (a bread pan works well!). Smooth out the brownie mixture in the pan with a spatula until it is even.
Sprinkle on cacao nibs if desired then place in the freezer to set for 30 minutes. After it has set, cut into squares and enjoy! Best kept in the refrigerator.
