I had been wanting a waffle maker for such a long time so when my husband surprised me with one for Christmas, you could say that I was a bit excited! It has been so much fun creating new healthy waffle recipes to make for brunches or to prep and save for quick breakfasts during the week.

This savory waffle recipe came to mind on a Saturday morning when neither of us wanted a sweet breakfast…but I still wanted my waffle fix! These are made without grains, gluten, or dairy and make an amazing base for a fried egg and sliced avocado. I also highly recommend a drizzle of sriracha on top and a sprinkle of everything but the bagel seasoning! You could get a little wild and add a drizzle of some maple syrup for a bomb sweet n’ savory flavor combo.

Grain free savory waffles that are perfect for a weekend brunch at home

Ingredients

  • 1 cup cassava flour
  • 1/2 cup almond flour
  • 1 tsp baking soda
  • 3 eggs
  • 1/4 cup coconut oil melted and cooled
  • 1/2 cup coconut milk see notes
  • 1 tsp apple cider vinegar
  • 1/4 tsp sea salt

Instructions

  1. In a mixing bowl, add in the cassava flour, almond flour, baking soda, and salt. mix with a whisk to combine and get rid of any clumps.

  2. To the dry ingredients, add in the eggs, cooled coconut oil, coconut milk, and apple cider vinegar. mix well until all incorporated and smooth. It will be a thick batter!

  3. Take 1/2 cup of batter and add to your preheated waffle maker. Cook to your waffle maker’s instructions. Mine took about 6 min. to cook. Repeat until all the batter has been used.

  4. Top with sliced avocado, fried egg, sriracha, or whatever your heart desires! Enjoy!

*for the coconut milk, simply shake up a can of organic canned unsweetened coconut milk or you could use unsweetened coconut milk from a carton.
