Double Chocolate Paleo Muffins

These are the best thing I have ever baked.

I know that may seem dramatic (and I am definitely known for being dramatic) BUT you have to believe me when I say that these muffins are AMAZING.  They are perfectly moist, fluffy, decadent and best of all they are made with real ingredients. My fiance and I went through a batch in 2 days and were quite sad when they were all gone…so I obvi had to bake more right away.

Double Chocolate Paleo Muffins

Grain free, gluten free, dairy free, and refined sugar free delicious muffins

Servings 8 muffins

Ingredients

  • 1 cup blanched almond flour
  • 2 tbsp cacao powder
  • 1 tbsp ground flax seed meal
  • 1 tsp cordyceps mushroom powder optional
  • 1/2 tsp baking powder
  • pinch of salt
  • 2 eggs
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and prepare a muffin tin by either greasing with coconut oil or placing in paper liners.

  2. In a mixing bowl, mix together all the dry ingredients. To the same bowl, add the wet ingredients and combine until well incorporated. Fold in the chocolate chips-reserving some for topping. 

  3. Fill the muffin tin with the batter making each muffin cup 3/4 the way full. Top each with the reserved chocolate chips.

  4. Bake in the preheated oven for 12 minutes or until a toothpick comes out clean from the center of a muffin. Let cool and enjoy!
