Chocolate Raspberry Globes

Three words: Chocolate Raspberry Globes. These healthy energy bites taste just as good as they sound. It has been such a long time since I made my own energy bites and I forgot how fab they are when I need a quick snack or a want something a little sweet.

For a while now, I have been dreaming about a recipe with both freeze dried raspberries and cacao together-because is there a better combo?! I thought that energy globes would be perfect! if you are wondering where to pick up freeze dried raspberries, I find them at Trader Joe’s!

They taste so decadent and are definitely my new favorite snack. This recipe is as simple as can be and comes together in just 10 minutes.

Chocolate Raspberry Globes

A decadent energy bite made with dates, cashews, cacao, and raspberries.

Servings 10 globes

Ingredients

  • 10 pitted medjool dates
  • 2/3 cup raw cashews
  • 2 tbsp cashew butter
  • 2 tbs cacao powder
  • 1/3 cup freeze dried raspberries

Instructions

  1. In a food processor or high speed blender, add in the cashews. Pulse for a few seconds until they become small crumbs with some larger pieces left. If you pulse beyond this state, the texture of the globes will be off.

  2. Add in the remaining ingredients to the cashews in the food processor or blender. Pulse again for a few seconds, pause, scrape down the sides, and continue to pulse again. Once the texture becomes just sticky enough to roll into a ball, stop.

  3. Spoon out a tablespoon at a time, rolling it into a ball shape. Repeat until all of the mixture has been used up.

  4. Store the globes in an air tight container in the fridge. These can last up to a week.
