Chocolate Raspberry Globes
A decadent energy bite made with dates, cashews, cacao, and raspberries.
- 10 pitted medjool dates
- 2/3 cup raw cashews
- 2 tbsp cashew butter
- 2 tbs cacao powder
- 1/3 cup freeze dried raspberries
In a food processor or high speed blender, add in the cashews. Pulse for a few seconds until they become small crumbs with some larger pieces left. If you pulse beyond this state, the texture of the globes will be off.
Add in the remaining ingredients to the cashews in the food processor or blender. Pulse again for a few seconds, pause, scrape down the sides, and continue to pulse again. Once the texture becomes just sticky enough to roll into a ball, stop.
Spoon out a tablespoon at a time, rolling it into a ball shape. Repeat until all of the mixture has been used up.
Store the globes in an air tight container in the fridge. These can last up to a week.
